Good morning!!  I had a wonderful Mother’s Day and a relaxing day with my family.  There is nothing better than spending quality time with those that you love!  I decided to kick back and relax a little which led me to falling behind on my usual Sunday routine!  I’m such a creature of habit so it was actually hard to let go and just RELAX!!

I still managed to get up at 5:30 am and do my meal plan and post it for my challengers.  I want to make sure that everyone has the opportunity to be successful.  Meal planning is one of those things that can either make or break your week. If you don’t have a plan in place you are more likely to make poor choices.  So I sat down and thought about the week I have in front of me.

Monday I work so I am home all day, but I need to have food ready to go so that I am not in the kitchen interrupting the kids.  I always try and plan a crockpot meal for Mondays because I work until 5 pm.

Tuesday is preschool day.  Apple and almonds is always my snack in my purse on my days to and from  drop off and pick up.  We are home for lunch but the kids are always starving. I typically reserve Tuesday as a Shakeology for lunch day so that I can make their lunch and eat at the same time!

Wednesday is my work day so I have my snacks and lunch packed and grab it from the fridge as I go.  Again it’s usually something quick and easy for dinner either crock pot or now that the weather is warmer we love to use the grill.  It’s so easy to throw on some chicken, zucchini and a baked sweet potato.

Thursday is preschool and errands day so it’s apples and almonds, water bottle and squeezable applesauce and juice for my son to keep him busy!

Friday is my day at home to clean, do laundry and hang with the kids.  We are the most relaxed on Fridays.  I tend to make homemade clean pizza for dinner on fridays with a side salad.  The cauliflower pizza or the pita pizza is our favorite go to recipes.

The weekends are pretty free flowing but I always plan just in case we are home!

So here is my meal plan for the week!

Now I print out my plan, smack it on the fridge and I am ready to go!
Last night I grilled a few extra pieces of chicken and put them in the fridge for the rest of the week.
I prepared the black beans for the salads and they are in the fridge as well along with the veggies that are cut up and ready to go!  I can feel that it is going to be a great week!!
