Breakfast Quinoa

I found a new love!  Anyone who knows me knows that I absolutely love my oatmeal for breakfast!  But I found this recipe in the P90X2 nutrition guide and I just fell in love!  If you don’t know what Quinoa is I will explain!  It is a grain that is also a complete protein and has a crunchy texture.  It can be used as a side dish with your dinner or in this case as a replacement to your morning cup of oatmeal!  Since it is a protein and a grain you don’t have to add protein powder or egg whites to your breakfast!  1 bowl and you are done!  Some quinoa has to be rinsed because of the coating that is on it.  I bought my quinoa from Costco and it comes pre-rinsed so I didn’t have to go down that path!  But if you do, then get a fine mesh seive to rinse it in before cooking! 

Here’s the recipe, I hope you enjoy!!

Ingredients

  • 1 cup almond, rice, or skim milk
  • 1 cup water
  • 1 cup organic quinoa, rinsed
  • 2 cups fresh berries
  • 1 tsp vanilla
  • 1 tsp. ground cinnamon
  • 1/4 cup chopped nuts
  • 4 tsp honey or rice syrup

Preparation
1.  Combine milk, water, and quinoa in a medium saucepan.  Bring to a boil over high heat.
2.  Reduce heat to medium low; cover and simmer 15 minutes or until most of the liquid is absorbed.  Turn off heat; let stand covered 5 minutes.
3.  Stir in berries, vanilla, and cinnamon; transfer to 4 bowls and top with nuts.
4.  Drizzle 1 teaspoon preferred sweetener over each serving.

So I made all four servings and then I just portioned it out for 4 days.  Then I just have to heat it up in the microwave and go each morning!  I hope you enjoy!!!
