Sizzling Summer Bean Salsa Recipe

This Sizzling Bean Salsa Recipe is great appetizer that you can serve with chips or  scoop on your plate as a side dish!!

My weekend has been just crazy busy with birthday parties and graduation parties!  I wanted something to take to these parties that would be refreshing but could still maintain my clean eating.  I find that parties offer NO nutritional value at all! So instead of throwing up my hands and eating whatever is served and feeling like crap afterwards because my body doesn’t like the food, I bring my own!  I have learned to bring an appetizer I can eat or eat before I go!!

Edamame, Tomato and Feta Salad with Fresh Basil

This edamame salad was bursting with flavor and it was gorgeous!!!

The Labor Day Weekend is in full force and that means picnics and parties for many of us!!  I am always looking for sneaky ways to show people what clean food tastes like!!!

One of my challengers forwarded me this recipe and I just couldn’t wait to try it!  I had plenty of fresh tomatoes and basil from my garden so I didn’t even have to buy them at the grocery store!!!

 

Zucchini Pizza

This idea of grilled zucchini used as a base for pizza toppings is one of those cooking ideas that I found from another blog I found online when trying to spice up some of my weekly snacks or meals.  This would be a great appetizer or lunch idea!

Even so, this is only a recipe in the very loosest sense of the word, because anything you like on pizza could be cooked on top of a thick slice of grilled or broiled zucchini. I’m a pepperoni girl, so of course I had to have that, but the topping options are endless here. Admittedly, this is not a pizza in the truest sense of the word, but if you’d like pizza flavors with a “crust” that’s gluten-free, low-glycemic, and low-carb, this is an idea you may end up liking just as much as I did!

I used an over-sized 8-Ball zucchini to make my pizza, but any large zucchini could be used here. You may want to slice it lengthwise if it’s a long zucchini. (I wouldn’t use the enormous zucchinis that are mostly seeds inside.) I do like the Muir Glen Organic Pizza Sauce I used in that recipe, but this time I didn’t want to drive to Whole Foods, so I was pleased to discover that this sauce from my neighborhood grocer also only had 3 grams of sugar per 1/4 cup.

Layered Hummus Dip

This layered hummus dip is festive as well as healthy.  As the holidays are quickly approaching you and I both know that you cannot become a hermit in your house avoiding all holiday parties because you are afraid of what is going to be served.  Just because you are changing over to a healthier lifestyle doesn’t mean that you have to deprive yourself of all the things that you love and look forward to.  What you do need to do is pick and choose what is most important and then keep on track the rest of the time.  You can absolutely have your cake and eat it too!  It just takes some thought and practice.

So over the next few weeks I am going to be sharing with you some of my absolute favorite recipes to serve at a get together or take to a party!  I hope this makes your holiday parties a little healthier.

What I tend to do is take something that I can eat so that I can load up on my stuff and I know I have a healthy option!  SNEAKY SNEAKY!!!

 

Pumpkin Hummus

Pumpkin is a great Thanksgiving tradition.  So this year I am going to make this fabulous pumpkin hummus along with food should taste good chips, and baked pita chips.

Bruschetta

I like to serve my Bruschetta with a whole grain baguette that I slice down brush with Extra Virgin Olive Oil and bake until lightly browned. You can make your own chips that are healthier than the store bought version!!

Clean Eating Tex-Mex Dip

I am such a sucker for Mexican Food and this one sounds completely divine.  I honestly am going to have to portion out the 1/4 cup serving otherwise I would eat it all at one sitting.
