Egg White Muffins

Last week as I was talking to some of my challengers we discussed these egg white muffins!  Seriously, what a genious idea!  Why didn’t I think of it sooner!  I’m always in search of quick easy snacks and meal ideas!  The fact that you can make these ahead of time, pop them in the fridge and grab and go for the rest of the week just makes perfect sense!  The other bonus is that if you have kids you can easily give these to them on the way to the bus stop or in the car!!  It’s a no brainer way to sneak in proper nutrition without anyone having to know!!!

The awesome thing is that you can throw in virtually any veggie or spice you want to get the taste you desire!!

This is a versatile meal that can be eaten on the go or at home, for breakfast, a snack lunch dinner, or before bed!

Clean Eating Take Me On Vacation Oatmeal

If you know me, you know that I love my oatmeal!  Any place, any time!! So, this clean eating Take Me On Vacation Oatmeal is a fun, delicious way to make me feel like I’m on vacation – the coconut, mango and cashews, total yum!!

This was delicious! I could eat it all day long!

Quick Protein Packed Berry Smoothie

So many people ask me, “What is a quick to go meal to stave off my hunger and possible binge eating?”  I love berry smoothies! So, why not make a Quick Protein-packed Berry Smoothie!  So, using a good quality protein powder (I use protein powder from Healthy Performance)  and a few ingredients you can create a powerful nutrient rich and protein packed smoothie to keep you satisfied and healthy.

I always fall back on this recipe when I’m either in a hurry or don’t know what to eat!

 

My Favorite Oatmeal Recipe

I made this oatmeal dish for a recent get together with some family and it was delicious.  You could even make this dish ahead of time and portion it out for the rest of the week for breakfast.  Then you wouldn’t be scrambling to make your healthy breakfast in the am.  Just grab the container and go!

Clean Eating Coconut French Toast

Who doesn’t love FRENCH TOAST!  I seriously used to be the carb queen and if I don’t keep that in check I could really swing the other way once again.  In an effort to treat myself every once in awhile I found this awesome recipe from my favorite website, none other than the Gracious Pantry!  She pairs my favorite foods together, carbs and coconut and voila we have Clean Eating Coconut French Toast!!!

But in all honesty I eat clean pretty much 100% of the time and I really try to find ways to keep it fun and interesting.  Eating clean doesn’t have to be boring or bland!  It’s all about finding alternatives for flavor that won’t be harmful to your body.

Clean Eating Egg White Veggie Frittata

Ever made a frittata?  Need a new recipe for egg whites?!  I get bored of the same foods day in and day out.  Egg whites and steel cut oats are pretty much my go too!  So, we made this clean eating egg white veggie fritatta from scratch.

I’m really trying to limit my carbs per day to 1 carb since I am leaving for our trip to Bora Bora in 16 days!  I really gotta step up my game!  I’m following the countdown to competition meal plan and focusing on nailing my results.

So this no carb meal is right in line with what we are striving for!

So while Matt is not the guy who measures things out but throws a bunch of randomness together and it actually always is pretty darn tasty!

Shakeology Protein Bars

I have a very hard time finding protein bars that are not loaded with artificial flavors and ingredients not to mention the large amounts of sugars and sugar substitutes. I am trying out a new recipe today that includes my all time favorite meal, Shakeology! So not only can I have a sweet snack but it has over 70 super foods in it as well. Nutrient dense and delicious, you have to try this!!!
