I made this dish for a recent get together with some family and it was delicious.  You could even make this dish ahead of time and portion it out for the rest of the week for breakfast.  Then you wouldn’t be scrambling to make your healthy breakfast in the am.  Just grab the container and go!

Clean Eating Coconut French Toast

Who doesn’t love FRENCH TOAST!  I seriously used to be the carb queen and if I don’t keep that in check I could really swing the other way once again.  In an effort to treat myself every once in awhile I found this awesome recipe from my favorite website, none other than the Gracious Pantry!  She pairs my favorite foods together, carbs and coconut and voila we have Clean Eating Coconut French Toast!!!

But in all honesty I eat clean pretty much 100% of the time and I really try to find ways to keep it fun and interesting.  Eating clean doesn’t have to be boring or bland!  It’s all about finding alternatives for flavor that won’t be harmful to your body.

Clean Eating Egg White Veggie Frittata

Ever made a frittata?  Need a new recipe for egg whites?!  I get bored of the same foods day in and day out.  Egg whites and steel cut oats are pretty much my go too!  So, we made this clean eating egg white veggie fritatta from scratch.

I’m really trying to limit my carbs per day to 1 carb since I am leaving for our trip to Bora Bora in 16 days!  I really gotta step up my game!  I’m following the countdown to competition meal plan and focusing on nailing my results.

So this no carb meal is right in line with what we are striving for!

So while Matt is not the guy who measures things out but throws a bunch of randomness together and it actually always is pretty darn tasty!

I must admit that I am a little obsessed with pumpkin recipes and pumpkin flavored foods, so here is another one for you!
This recipe sounds amazing and I haven’t made it yet but I just had to share it with you!  I will be making it this Friday for my family that is spending the night and staying to do some Christmas shopping on Friday!

Black Bean Brownies

I decided to give a dessert recipe a try tonight. Something I have always been intrigued by but never really had the guts to try.  Black Bean Brownies. We decided to open a bottle of wine, grill some fish and asparagus and have a nice dinner on the patio tonight.  So I decided we needed dessert to go with our dinner! This was the perfect opportunity to give this recipe a try. Honestly I couldn’t believe how truly good they were. My in laws stopped over and they do not like anything that is out of the ordinary. Neither my husband or I told them what was in them and they both liked them!!!  So I would say it passed the toughest critics out there.  This is totally going into rotation!!!
