21 Day Fix Extreme Recipe: Chicken Fajitas

We are also experimenting with the recipes on the Fix Extreme and so far there has not been 1 recipe that we haven’t loved!  We made the chicken Fajitas on Sunday  night and we actually made extra so we would have lunch for Monday.  Not only was it really delicious, it made great leftovers too!  This is something you could make in bulk and portion out for the entire week and have lunches for a few days.  If you have non clean eaters in your family you can still do the chicken fajitas but just give everyone else shells to use instead of lettuce!

So please put this in rotation, it’s quite awesome!  Make sure to let me know what you think!

Shakeology Mug Cake

So I am going to just shoot it straight!  I have a killer sweet tooth and I love anything chocolate! I have a hard time passing it up! I was in dire need of something last night so I whipped up this bad boy! It satisfied the need for something sweet and I didn’t kill my healthy eating! I am very aware that when you heat up Shakeology it does take away some of the nutritional value, but I already had my shake for the day so its ok!  I’m totally cool with it! You gotta give this a try!!!

Blondie Cookies

Seriously I think I have died and gone to heaven. Don’t let the ingredients fool you because these bad boys really do taste good! I mean not just a little good but amazingly good!!  You have to try them!

They are vegan and gluten free but you don’t have to be either of those in order to make these. I classify these as the perfect sweet treat when that craving hits! Or if you are like me, you make them, you serve them and you TELL NO ONE that they are healthy and then wait to see what people say! I bet they love them and then ask for the recipe! Then at that point, I don’t shout omg they are healthy!!  I say here you go, hand over the recipe and watch their expression!!! PRICELESS!!!!

Double Chocolate Macaroons

It is a tradition in my family to bake Christmas cookies every year.  My mom and I get together and spend 1 whole day baking all of our favorite cookies to give away as gifts and put out at our Christmas parties.  This year when she asked me about baking cookies I had a hard time saying yes.  So, I decided to compromise.  I baked a few of her favorites for her to give to her friends and we baked a few new “clean” cookie recipes for me to share with my friends.  I baked 2 different kinds of cookies and the Double Chocolate Macaroons turned out fabulous but the Chocolate Hazelnut Biscotti was a bust!  So here’s my recipe to share with you!  Super rich and totally dreamy!

Oatmeal Cookies

Tonight Landon and I baked cookies for Santa!  Landon was so excited to help me mix and stir all the ingredients.  He even helped me scoop out all of the cookies onto the baking sheet!  My family was there to taste test our first batch of clean oatmeal cookies and everyone agreed that they were delicious! So Santa’s waistline might be a little lighter this year because of the Mitro household’s new lifestyle, lol!!

No Bake Shakeology Cookie

Sometimes you just want a cookie! But, personally I know that since I started clean eating it just doesn’t agree with me anymore!

So here is my CONFESSION! Yesterday was my son’s 5th Birthday Party! I seriously went into the day doing my workout, drinking my Shakeology, eating super clean and mentally I was prepared not to eat the cake! I am leaving in 5 days for a cruise with my husband that I earned from Beachbody. I have been working so hard on my results that I didn’t want to mess it up! But, the cake looked amazing and I really really wanted to taste it! So I gave in, ate the cake and ice cream and paid dearly for it the next day! I realized that no longer do I feel deprived when I bypass cake and ice cream. I feel empowered!!! Truthfully I thought that the cake was going to make me feel better, that I would be satisfied. But, today I was irritable, short tempered and scatter brained. I truly think it had to do with the fact that my body doesn’t get sugar like that very often.

I was kicking myself for eating that cake! I mean so badly that I came home and get this…. ate a donut and some animal crackers to! Holy cow talk about piling it on! SUGAR IS ADDICTIVE, the more you eat the more you crave it! So today, I got up, did my double workout, drank my warm lemon water, packed my snacks and lunch and am back on track! This is week 3 of Round 2 of the 21 day fix!  Double workouts and the 3 day quick fix this week! I am going to own it! You just watch and see, this is all mine!

I am not letting one little slip up define my worth, determine my progress or send me in a downward spiral of defeat! Today was hard, the sugar monsters were here all day. But, water was my best friend, Shakeology twice, and green tea! I would say its a successful recovery! In the future, its recipes like the one below that will be my saving grace! I love my clean cookies and cakes and that is what I am sticking with!
