Pumpkin No-Bake Power Bites

I found this recipe while surfing some new clean eating sites and it just might be one of the most amazing things I have ever tasted!  I love fall and I love oatmeal and these little bites are just the ticket to a clean healthy snack!!!  I’m in heaven!  Now, to not eat them all in one sitting!

Baked Apples

This time of year we sometimes just want something warm and comforting!  Especially when apple pies and pumpkin pie is everywhere!!!  This is the perfect time to bust out this easy recipe!!!

Peanut Butter Fudge Power Bars

Oh my heavens is this one of my favorites!!! Who here is just about dying for something sweet. Honestly I am the biggest sweet junkie there is so this is sooo very hard for me! When Nicole shared this at our Dream team leadership retreat I just knew it was going to become a family favorite. So here I am sharing it with you now as well. This is of course a treat but it’s also a great replacement for a cookie when you just can’t resist!!!!

Parmesan Kale Chips

Yes it took me forever to actually jump on the Kale bandwagon.  I’m not going to lie, but I thought it was creep and weird at first.  I actually had Kale when I did the Ultimate Reset and HATED it!  But, everyone kept raving about these Kale chips and how awesome they were, so I decided what the heck!  The worst thing that could happen is that I waste a couple of bucks on a bunch of Kale!

Surprisingly, I ate the whole bunch in one sitting and I would make it again and again. Even the kids tried it and liked it!!!

Homemade Coconut Protein Bars

Ok this might be the deadly combination, unsweetened coconut, almonds and cashews together.  I think I just died and went to heaven.  A challenger in my 21 day fix group found this recipe and shared it with us.  I made them and seriously I can’t have them in my house, they are sooo good! They definitely need to be portioned out and you are going to have to be super super mindful of how much you eat.  While they are full of clean ingredients you have a lot of good fats in there!  So 1 serving is all you need.
It’s a clean snack because it has your protein from your nuts and then your complex carb from your dates!  BINGO!!!!!  I encourage you to add this to the list of things to put into rotation especially if you need a quick fix for something sweet, you are looking for a portable protein bar that is healthy or you need something that is filling for a snack!  Protein bars are a great on the go snack but they are always choked full of artificial ingredients so this is a great alternative.
Snacks can get boring and repeating the same things over and over can get old fast.  Try these out for something new!
My caution to you is if you are down to the last 10 lbs, you might not want to use these.  Lots of natural sugar can derail progress.  Or you eat this instead of another high sugar fruit like Bananas, Mangoes and Grapes.

Apple Crisp Yogurt

The first year I started clean eating I was devastated that I had to give up my Starbucks Pumpkin Spice Lattes because that was something I looked forward to!  But when I saw the calories, the sugar, the ingredients I just about died!  It is the most awful drink you can possibly have!  I made a commitment to start finding other recipes, drinks and foods that could replace the old habits that I had.  It’s not about giving up everything that you enjoy but instead finding balance in life so that you can have your health and you can have your food too!

I successfully gave up PSL’s without blinking an eye!  Ice cream on the other hand is a little harder for me!  Having that sweet creamy ice cream is a comfort food.  So how do you get around that???  My solution is greek yogurt!  We forgo the ice cream for greek yogurt quite often and its a habit our 2 boys have now adopted as well.

This past week my husband was rummaging around the kitchen on the hunt for an evening snack and he started chopping and scooping and doing who knows what in the kitchen and THIS is the concoction he came up with!  Delicious, crunchy, CHOCOLATE and creamy!  It hit on all the areas that I love and need as far as comfort food!

For Fix containers it is 1 red, 1 purple, 1 yellow and a spoon if you add in peanut butter.

Chocolate Shakeology Pudding Recipe

I have had quite a few people suggest the Chocolate Shakeology Pudding Recipe to me and I just hadn’t taken the time to try it. I don’t think I was necessarily afraid of it, I just get lazy sometimes and don’t feel like trying something new.

I needed a little sweat treat tonight so I decided to whip it up. There are just some days that no matter how healthy I eat that the cravings still strike.  I don’t want to completely deprive myself but I also don’t want to feed the sugar demons because it is a slippery slope.

This is hands down one of the easiest and yummiest treats that keeps me on track with my nutrition and fitness goals. I am definitely someone who loves chocolate, but I also love the definition in my body from eating healthy and clean.  I also love that I can have something that is rich and creamy but also is healthy at the same time!  Honestly, why wouldn’t you want the best of both worlds.

Sizzling Summer Bean Salsa Recipe

This Sizzling Bean Salsa Recipe is great appetizer that you can serve with chips or  scoop on your plate as a side dish!!

My weekend has been just crazy busy with birthday parties and graduation parties!  I wanted something to take to these parties that would be refreshing but could still maintain my clean eating.  I find that parties offer NO nutritional value at all! So instead of throwing up my hands and eating whatever is served and feeling like crap afterwards because my body doesn’t like the food, I bring my own!  I have learned to bring an appetizer I can eat or eat before I go!!

Breakfast Smoothie

Want a quick breakfast that provides tons of nutrients, energy, protein and actually tastes good?  This smoothie is for you!  I have really taken smoothies under my wing in a pinch. When I need something that is chocked full of nutrients but doesn’t require me to cook a full meal then this is my go to!  Smoothies are filling and really tasty!  You would be surprised that this combination is very sweet!!!

Layered Hummus Dip

This layered hummus dip is festive as well as healthy.  As the holidays are quickly approaching you and I both know that you cannot become a hermit in your house avoiding all holiday parties because you are afraid of what is going to be served.  Just because you are changing over to a healthier lifestyle doesn’t mean that you have to deprive yourself of all the things that you love and look forward to.  What you do need to do is pick and choose what is most important and then keep on track the rest of the time.  You can absolutely have your cake and eat it too!  It just takes some thought and practice.

So over the next few weeks I am going to be sharing with you some of my absolute favorite recipes to serve at a get together or take to a party!  I hope this makes your holiday parties a little healthier.

What I tend to do is take something that I can eat so that I can load up on my stuff and I know I have a healthy option!  SNEAKY SNEAKY!!!

 

Quinoa Power Cereal

As I flipped through the Les Mills Pump nutrition guide looking for some new recipes to try I came across this tasty Quinoa Power Cereal as breakfast option.  If you don’t know anything about quinoa I will give you the scoop.  It is a type of grain, but it is very high in protein.  Cooked similar to rice, it has more of a chewier texture.  Quinoa has a slight nutty flavor and totally satisfies my need for something crunchy like cereal.  Such a great way to make sure that you are getting in enough protein during the day and giving yourself complete meals!   Stay full longer and are left satisfied instead of hungry!  Give it a try!!!

Egg White Muffins

Last week as I was talking to some of my challengers we discussed these egg white muffins!  Seriously, what a genious idea!  Why didn’t I think of it sooner!  I’m always in search of quick easy snacks and meal ideas!  The fact that you can make these ahead of time, pop them in the fridge and grab and go for the rest of the week just makes perfect sense!  The other bonus is that if you have kids you can easily give these to them on the way to the bus stop or in the car!!  It’s a no brainer way to sneak in proper nutrition without anyone having to know!!!

The awesome thing is that you can throw in virtually any veggie or spice you want to get the taste you desire!!

This is a versatile meal that can be eaten on the go or at home, for breakfast, a snack lunch dinner, or before bed!
