I told my husband that I am naming today “Mitro Mojito” night! I want a mojito recipe that is clean, or at least a little cleaner than what you would get when you go out! So since Matt is the master drink maker he definitely was up for the challenge. If you remember back to Christmas time he came up with that killer peppermint bark martini recipe!!
So here is what we made, and I am sipping it right now and it’s quite tasty! The coconut milk was inspired by a restaurant we went to in West Palm Florida.
- 1 shot of Rum
- 1/3 Fresh Limes
- 6-8 Fresh Mint leaves
- 1 1/2 tbsp Organic Coconut Milk
- Lime Seltzer Water
- 2 tbsp Organic Sugar-add more sugar if you want it sweeter, but I tend to be conservative on the sugar.
Muddle the mint, sugar and lime together. Pour 1 shot of rum, Coconut Milk, add ice, organic coconut milk and seltzer water. Stir and enjoy!!!
