Mini Pita Pizzas

I love pizza and so does the rest of my family.  This is a healthy and easy way to satisfy those cravings without all the grease and fat.

Every once in a while you have to indulge in the things you like but it is important to have them in moderation.  You can make substitutions that won’t wreck all the hard work that you put into your body.

Kung Pao Chicken

This dish packs some serious punch, so if you like hot then this is the recipe for you!  We were craving some Chinese food but without the extra sodium and unclean ingredients!  Here is a way to indulge without falling off the wagon.

Chicken Noodle Soup

I have 2 sick boys at home and what else is more appropriate on a cold winter day than some homemade chicken noodle soup.  The store made variety is always good in a pinch but with the increase in sodium and sketchy looking meat I felt that making a pot of my own would be much more comforting.

I didn’t realize how easy chicken noodle soup is to make until I actually did it!  Super easy and I got to use my new Dutch Oven that I got for Christmas!  It’s a win win for everyone!

Big chunks of veggies, soothing broth, this soup will become a family favorite!


  • You can use fresh thyme sprigs instead of poultry seasoning, I prefer the different herbs in poultry seasoning
  • Always salt and pepper each layer – the base, the stock and finished product. But go light on salt since you can’t take it away.
  • Add as many veggies as you like. If you like a lot of carrots, then add more – it will only help the flavor!
  • Short on time? Buy a rotisserie chicken and shred it up.
  • Remember to season your raw chicken breast while you cook. I chopped the breast up into small cubes prior to cooking, adding salt, pepper, dried parsley, onion powder and garlic powder. You want the chicken to have its own similar flavor to the stock.

Clean Eating Minestrone Soup

Here is a great clean eating spin on a classic soup!  I made this in my wonderful new dutch oven for the whole family to enjoy!  The recipe didn’t call for chicken but I cooked some chicken breast and cut it up into chunks and threw it in the soup for a complete meal.

Cauliflower Crust Pizza

This week I decided to give Kati’s Cauliflower pizza a try because I wanted pizza and I need to eat more veggies everyday and this was going to be it!  I didn’t tell my husband what the pizza was made of because I didn’t want him to balk at it!

It actually was REALLY good!  I would totally make it again!  It definitely isn’t Pizza Hut Pizza but it does the trick for me!  So if you don’t want to totally kill all of your hard work then I strongly recommend this recipe!  I added some red onion, green peppers, mushrooms and spinach to my pizza!  I just sauteed them in a little olive oil and garlic and placed on top!

Avocado Chicken Salad

Today is not just another day – it’s another step in the right direction in my personal goal to switch my entire family over to clean eating!  My husband was doing so well with packing his lunch and eating his snacks but somehow life got the best of us and he slowly started drifting his way back into his old habits with exercise going first and then his eating.

At one point we stopped and realized that all the hard work he did with Insanity just went down the tubes.  So instead of wallowing in the bad decisions that were made he just simply asked me to pack his lunch again and get him back on track.

In an effort to support him the best that I can I went searching for new recipes to spice up our lunch selections!  I found this amazing recipe for chicken salad that I transitioned into an eat clean version and made for my husband last night!  I prepared enough for the rest of the week so that it is quick and easy to grab and go!  It has a combination of good fats, protein and dairy all in one, enough to keep you full and energized through the day!

Quinoa Taco Salad

For those of you that know me you know that one of my favorite foods is Mexican food!  But we all know that Mexican food is high in sodium and those re fried beans and chips just are not going to help you lose weight!  They may feel good while you are eating them but when you are done the guilt of the damage you just did to your calorie intake is going to send you to a low place!

So instead of feeling like you are depriving yourself of all the foods you enjoy find a way to make them healthier!  Oh and remember, you are NOT depriving yourself of life by eating healthy! You are respecting your body and giving it FUEL so that it can function and give you energy to do the things you need to do during the day!  Food is not a source of comfort or a way to de stress after a long day!  If you constantly view food that way, you will always struggle!  Instead think of some positive ways to view food and your life and outlook will change forever!

Taco Salad

Last night’s dinner was lick your fingers good.  I honestly didn’t have any recipe to go by I just created my own materpiece and man was it good!  I am a Mexican food lover and as we all know it is not always the best clean choice for weight loss and health.  So I make my own version of a Taco salad and enjoyed every last bit of it!
