black beans and rice This recipe is from week 1 of the Reset.  I loved it so much that I cannot wait until the Reset is over so I can have it again!!!  It’s the easiest and most flavorful meal I’ve had in a long time!  If you are a Mexican food fan, check it out!

3/4 cooked brown rice
1/2 canned low sodium black beans
1/4 tsp extra virgin olive oil
1/8 tsp chili powder
1 pinch ground cumin
1/4 tsp ground coriander
1 tsp. Bragg liquid Aminos or (low sodium soy sauce)

While rice is cooking, heat beans gently in saucepan until very hot. Drain and return to pan.  Add oil, spices, aminos, and salt.  Stir well.  Gently fold beans into cooked rice.  Serves 1

Now you can take the rice and black beans and add 1/4 cup fresh corn, 2 tbsp natural salsa, 1/4 cup guacamole, 1 6 inch corn tortilla, and some steamed veggies for a complete and filling vegetarian dinner!  You can turn any non healthy eating into a healthy one with this meal!!!  I promise!!!
