Just got done baking these amazing pumpkin protein bars! Every once in awhile we need to spice things up with our diet and nutrition. Landon helped me make the bars and as we speak I am sitting here with my afternoon cup of coffee and munching on my 4 protein squares! YUMMO!!!
This is a great add to your morning or afternoon snack!
Nutrition Facts:
Nutrition (without walnuts): 1 square = 47 calories, .7 g fat, 8 g carbs, 3.7 g protein
Nutrition (with walnuts): 1 square = 63 calories, 2.3 g fat, 8 g carbs, 4 g protein
Ingredients:
- ½ C Xylitol Brown Sugar Blend (Ideal)
- 1 – 4 oz. jar baby food applesauce
- 2 tsp. ground cinnamon
- 1 ½ tsp. ground ginger
- ½ tsp. ground clove
- 1 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 2 tsp. vanilla extract
- 4 large egg whites
- 1 – 15 oz. can of raw pumpkin
- 2 C oat flour
- 2 scoops vanilla whey protein
- ½ cup almond milk
- ½ C chopped walnuts (optional)
Directions:
For an easier "to go", can I make this in muffin tins? I found it's easier to portion things that way also. Have you tried it yet or does it need to be baked in a 9×13?
@MegG I haven't tried the muffin tins. But I don't see why it wouldn't work! That's a great idea. If you try it will you let me know how they turned out?
Will do! I imagine the baking time might be less because of the glass to metal component and smaller portions that are baking.
Can you also share how big of scoop your protein scoop is? I've found different proteins have different scoop sizes. Do your 2 scoops = 1/4 cup? Or 4-ounces?

MegG I would just check them by putting a toothpick in, when it comes out clean they are done!
And, my scoop of protein powder is 1 scoop. I just use the scoop that comes with my protein powder from Beachbody. 1 scoop is about 1/3 cup.
Now that there is Vanilla Shakeology, would that work as a substitute for the whey protein powder?
