I decided to give a dessert recipe a try tonight. Something I have always been intrigued by but never really had the guts to try. Black Bean Brownies. We decided to open a bottle of wine, grill some fish and asparagus and have a nice dinner on the patio tonight. So I decided we needed dessert to go with our dinner! This was the perfect opportunity to give this recipe a try.

Ingredients:
- 1 (15.5 oz ) can black beans, rinsed and drained.
- 3 eggs
- 3 tablespoons coconut oil
- 1/4 cup unsweetened cocoa powder
- 3/4 cup organic sugar
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1 pinch salt
- 1/2 cup chocolate chips- dark chocolate chips
Directions:
Preheat oven to 350 degrees and grease an 8×8 pan. Place beans in food processor and process until mashed. Add eggs, vanilla, cocoa powder, baking powder, salt, sugar, and oil. Process until smooth. Pour into pan and sprinkle chocolate chips on top. Bake for 30-35 minutes.
Honestly I couldn’t believe how truly good they were. My in laws stopped over and they do not like anything that is out of the ordinary. Neither my husband or I told them what was in them and they both liked them!!! So I would say it passed the toughest critics out there. This is totally going into rotation!!!

Is there anything I can substitute for the coconut oil? I am allergic to coconut but would love to try these!
