Happy TUESDAY!!! I was searching for some great recipes to mix up our typical clean eating chicken dinner and I found a recipe that I absolutely fell in love with! The thing that really made me fall in love was that it was very simple to make, it was tender and juicy and it doesn’t take long to make either! It fits very nicely into my Insanity Max30 Nutrition Plan and can be paired with a healthy carb like brown rice or a sweet potato and a steamed veggie and it’s a complete meal!
So if you like hummus you will definitely like this recipe.
Ingredients:
4 boneless skinnless chicken breast
salt and pepper
1 cup of hummus {any flavor, I used plain}
1 tbsp olive oil
2 lemons
1 tsp paprika
Directions:
Preheat oven to 450 degrees. Prepare one large baking dish or two smaller baking dishes with cooking spray.
Pat the chicken dry.
Lay the chicken breast in the bottom of the pan, then spread hummus over the top of the chicken, squeeze the juice of the lemons on top and sprinkle with paprika.
Bake for 25-30 minutes until the chicken is cooked through. Serve and enjoy!
For a quick easy dinner you can use the microwave brown rice that you can find in the freezer section and steamed green beans.
