Eating clean in the Mitro household has become a family affair.  I usually prepare the majority of the meals but on the weekend Matt always takes the lead and cooks breakfast with Landon.  It is usually pancakes since Landon’s favorite food is pancakes!  I found an awesome clean pumpkin pancake recipe and let the boys go to work!
I must say Matt was skeptical at first because the recipe called for rolled oats and cottage cheese.  There was no flower in the indgredients but he went with it!

Landon was right in there stirring and dumping the ingredients! 
Recipe:
6 egg whites
1/4 canned pumpkin
1/2 cup cottage cheese
1 tsp vanilla
1 cup whole rolled oats
1 tsp pumpkin spice
Real Maple Syrup.

Mix all ingredients except the maple syrup and brown in pan.  Enjoy with a small amount of maple syrup.

I love the texture of these pancakes.  They had a small amount of crunch due to the rolled oats.  They were very delicious and I loved the hint of pumpkin spice that was found in the pancakes!  Definately going in my favorite recipes pile.

Landon and Matt both ate all of their pancakes as well, so I’d say Sunday morning breakfast was a success!
